Serrano Lime Vinaigrette
1 part lime juice
2 parts olive oil
3 roasted serrano peppers
1 Tbsp Dijon mustard
1 Tbsp honey
1 tsp salt
Blend in blender until smooth
Enchiladas Recipe
I made my first pan of enchiladas for a potluck lunch when I first moved to Texas. I made a batch of chicken enchiladas and followed a recipe I had found in one of my cookbooks. The women that grew up eating enchiladas were all very nice and told me the dish was delicious. It was for a Christmas celebration so I used diced green and red peppers to sprinkle on top of the dish. I received a good many compliments and then someone told me it was delicious but why did I use flour tortillas. That started a conversation and I found some recipes don’t specify flour or corn tortillas because everyone down here knows to use corn tortillas to make enchiladas. I now use corn tortillas even though the flour tortillas were pretty tasty.

4 green peppers (roasted and skinned/seeded)
2 onions
4 small zucchini
4 garlic cloves
Olive oil
Cumin
Turmeric
Balsamic vinegar
salt and pepper
